Pickled olives from Slovenian Istria
The most suitable varieties for planting olives are: štorta, leccino, mata,
ascolana, also Istrian white.
The technology of olive processing is based on a traditional process
leaching of bitter substances from fruits and natural fermentation in brine from
traditional Piran salt and water. The heating process is in progress
naturally, without the use of chemical accelerators, so it requires
quite a bit of time and manual labor.
In the Kraševka store we have quite a few types of olives in brine that are grown
on the Izola hills, and organic cakes in olive oil from the Abrami farm
in Krkavče.
In recent years, olive fruit spreads have become very popular
various additives such as: garlic, almonds, asparagus, pickled fish.
