Slovenia is a happy country, as its location at the crossroads of the Mediterranean, the Pannonian Plain and the pre-Alpine world enables it to produce top-quality wines of both Mediterranean and Central European type.

 

TRIVIA:

 Orange wines

For orange or macerated with foreign wine, we need white grapes. For the production of ordinary white wines, the grapes are immediately pressed, thus separating the grape juice from the skins and stalks. For orange wine, the grapes are transferred to a container after gentle squeezing and lie there together with the skins, pips and remnants of the stalks, from a few days to a few months. During this time, the grape juice ferments, constantly in contact with the skins and stalks. The process, called maceration, gives the wine a golden amber color (orange).
This process was once called “cooking wine”. In the Primorska region, wine was sometimes "cooked" by everyone, as it gained natural protection. Therefore, this method of white wine production is considered traditional.

 

Mysterious Karst wines 

Producer Emil Tavčar, Kreplje

 Clay karst soil, jerina, (Terra rossa) contains a lot of iron and other minerals

Typical karst climate: dry and hot summers, little precipitation, mild winters with karst bora, which quickly dries the air and soil.

The best locations of vineyards in the vicinity of the village Kreplje: plenty of sun from early morning to late afternoon.

Vines aged 20 to 70 years, which have strong and overgrown roots; so even longer periods of drought do not affect them too much. Each vine bears only so many clusters that it can endow them with the necessary earth juices even in prolonged drought.  

Healthy, tasty and well-ripened grapes following old processes of spontaneous fermentation, they produce top-quality wines that last for many years. Producer Emil Tavčar's wines are matured in oak barrels; they are bottled after three or more years; depending on the harvest.
